Quick set/release/shot just means shooting or passing without taking time to read the defense. It can be useful when a shot or pass is being blcoked well. A rolling pull means what it says, the ball is not stopped and it is shot while still moving. Picture a pull shooter that catches a pass on the 3bar, pushes it over to the middle guy as though he is going to set up the shot, but before the ball stops he quickly shoots it off a roll. It is used to catch the goalie sleeping. I assume that a "patient roller" means that the shooter does the opposite of quick shooting.
